Bowen Island Herb Salts' Citrus Blend Hot and Sour Shrimp Soup


  • 4 cups of chicken broth
  • 3 tbsp. lemon juice
  • 2 kaffir lime leaves finely chopped
  • 1 tbsp of finely chopped lemongrass
  • 3 tbsp. fish sauce
  • 2 tsp. hot chilli sauce, or a hot cayenne pepper sliced up to taste (we dehydrate our cayenne peppers, and put a full pepper chopped up finely into this recipe)
  • ½ tsp. sugar
  • Handful of vermicelli noodles (optional)
  • 10 straw mushrooms (see photo below)
  • 12 raw shrimp, peeled and heads & tails removed
  • 2 chopped green onions
  • Small handful of parsley or cilantro to taste
  • Citrus Blend salt to taste


1. Bring the stock to a boil, adding the lime juice, lime leaves, lemongrass, fish sauce, chilli sauce or cayenne pepper, and sugar. Simmer for 3 minutes.

2. Add the noodles (if using), mushrooms and shrimp. Cook for 2 – 3 minutes, or until the noodles have softened. Add Citrus Blend salt to taste. Enjoy!
